Lyophilization is one of the most effective methods of food preservation. Produced freeze dried food is mainly designed for athletes and travelers. Damaged material frozen to a very low temperature and then dried in such a way to skip the liquid phase. It involves drying and freezing of products not capable of heating. Freeze-drying process used to regenerate damaged and flooded, attacked by worms and fungi, documents, library collections, archives, books. Freeze-dried food is light and very importantly, retains all the nutrients, minerals and vitamins. Recently, however, also produces a freeze-dried food for daily household use as the most healthy, dried containing all the necessary ingredients for good nutrition. Lyophilization does not only apply in the food industry. It applies also in: laboratory chemicals, biotechnology, archeology, pharmaceutical plants. In the fifties of the twentieth century for military and space was invented process of freeze-dried food. Liogam apply to this mixture or liquid nitrogen cooling. Freeze-dried product is characterized by a very good absorption of the body, and solubility.
